How to prepare baklava

first stage

To prepare simple homemade baklava dough, first mix flour, eggs, yogurt, milk, baking powder and corn oil and mix well.
Then knead the dough to get a firm and consistent dough.
Place the dough at room temperature for 20 to 30 minutes to rest. (To prevent the dough from drying, put it in a freezer bag.)
Now you have to divide the dough into small balls, for this you have to divide it into three equal parts and make 16 small balls from each part.
Sprinkle some cornstarch on the dough and on the surface where you are going to spread the dough.
Then spread the dough thinly with a rolling pin and sprinkle corn starch on them.

second stage

The first step in preparing Istanbul baklava is to prepare its nectar. Put the pot on a low flame and pour water, sugar and saffron into it. The combined ingredients should stay on the flame for at least 20 minutes. Be sure to clean around the pot with a wet brush so that the sugar does not stick. Finally, add some lemon essence or lemon juice to the nectar. The reason for adding lemon juice or lemon essence is to prevent sugaring of the nectar.

Some people, when preparing nectar, put it on the heat until it becomes completely concentrated. But there is no need to do this and after boiling for 20 minutes, you can remove it from the heat. Set aside to cool completely.

Cut the dough to the size of the mold. Melt the butter on low heat and apply it with a brush. Now spread a layer of dough on the bottom of the mold and spread butter on it again. Continue this work for seven layers and apply melted butter on each layer.

The fourth stage

In the next step, you need to prepare the intermediate ingredients. First, peel the walnuts and grind them completely with a grinder to create a uniform powder. If you are using pistachios or other ingredients as a middle ingredient, also crush and powder them thoroughly.

Prepare a large bowl and pour the walnut powder along with the sifted sugar into it. Then add cinnamon powder and cardamom powder and mix well. Pour the combined ingredients on the layers of dough and place another layer of dough on it. Butter the final layer and press the ingredients with your hands until they are completely combined.

The fifth stage

Place the mold in the oven at 190 degrees Celsius. The oven must be fully preheated. Baklava should remain in the oven for 35 to 45 minutes. At the end, you can turn on the grill to make it completely roasted and golden. After baking, cut the dough into desired sizes.

The sixth stage

After finishing the work and while the dough is still hot, pour the cooled nectar on it and let it sit in the environment for 4 hours to completely absorb the sweetness. After it is completely absorbed, put it in a serving dish and put it in the refrigerator to keep it in the refrigerator for 12 hours. Your baklava is ready.
